molasses & blackberry spice cake

1 cup whole wheat flour

4 Tbl fresh ground oat flour

1 Tbl sucanut sugar

1/4 tsp sea salt

1/2 tsp baking soda

1/2 tsp baking powder

1/8 cup milk

1/8 cup buttermilk

1/4 tsp cinnamon

1/4 tsp nutmeg

2 pinches cloves

1 egg, room temp if possible

4 Tbl butter, room temp

1/3 cup molasses

1 tsp vanilla

1 cup frozen blackberries, at least a bit thawed

topping:

1/2 cup soaked, sprouted almonds

1/2 cup fresh ground oat flour

1/4 cup butter, frozen, cut into 1/4" cubes

2 Tbl sucanut sugar

sift the flours, sugar, salt, baking soda & baking powder into a small bowl.  include any small pieces left at the bottom of the sifter.  set aside.

in a large bowl, whisk together the butter, vanilla and molasses until smooth.  add to the milk (i have a glass pyrex measuring cup i use this) one egg and the spices -cinnamon, nutmeg and cloves- beat slightly and then add to the large bowl of whisked butter.  whisk it all to incorporate.  with a spatula, slowly fold in the flour mixture
