cucumber & green onion yogurt sauce
plain yogurt is an amazingly versatile ingredient, and we always keep some on hand. once you familiarize yourself with some of the yogurt sauces, you may notice they seem to go well on just about anything.
the secret to our yogurt sauce is mincing most of the ingredients. spend some time really chopping them up good. red, white, and green onions, olives, chili peppers, lamb (!), cucumber, parsley, cilantro and garlic all make great ingredients. this recipe calls for cucumber, green onion and parsley.
1 quart of plain yogurt
1/2 cup minced cucumber
1/4 cup minced parsley
1/4 cup chopped green onion (no need to mince here)
a few big pinches of salt
fresh-cracked pepper
Mix them all together and serve promptly. try serving it as a dip with fresh toasted baguette, as a topping for a rice dish, on top of mashed potatoes, or as a kind of Hollandaise substitute in a poached-egg dish.
Feeling creative?... add a teaspoon of pan-toasted cumin seeds and a dash or two of cayenne pepper.
