tahini & cilantro salad dressing
We find this dressing recipe to be a handy framework that works for a variety of ingredients. the basic elements are olive oil, tahini, vinegar and a minced fresh ingredient such as: onion, parsley, peppers, celery or green onion. the amounts are given in terms of total volume- like a cocktail recipe.
half-pint mason jar with lid
1/4 apple cider vinegar
1/4 olive oil
1/4 tahini
1/4 minced cilantro and onion
salt and pepper
squeeze of lime or lemon (optional)
The easiest way to do this is to measure out the liquids directly into the jar, oil, vinegar then tahini. add the minced onion and cilantro, and optional squeeze of citrus. cap it with a lid and shake the holy hell out of it, give it a taste and then season w/ salt and pepper to your liking. keep it in the refrigerator and shake before using.
This stuff goes great on our local Covelo Organic salad mix: do your ‘salad homework’ now while its abundant. for huge flavor quotient, use the best ingredients you can get your hands on: raw tahini, organic california olive oil, and covelo walla-walla onions.
